Yum Yum. I'm In Love.

I hope you are hungry. Because the secret recipe that I have am about to bestow upon  you will cause many to run to the kitchen and eat, regardless of their hunger. Unhealthy, yes. Will I stop? no.

This recipe has been in my family for years, and I have never shared it until now.

Just kidding.

I saw it on the Food Network, and decided to do it my own way... and thus... it was created...

  1.  First, Cut up your squash into medium sized wedges. Spread them on a cookie sheet, and cover with about 1 1/2 Tbsp of olive oil, salt & pepper to taste. Put them in a preheated oven at 425F degrees for about 40 minutes.
  2. Then, prepare about 3 large or 4 medium size chicken thighs (skin on, bone in). Brown them in a pan on med-high heat with a little bit of olive oil. Don't cook them all the way through, just get them crispy on the outside.
  3. Next, throw in about 1 cup of white wine, 2-3 Tbsp of capers (more if you love them like I do), 1 can of quartered artichoke hearts (drained & take out a few to snake on), salt & pepper to taste.
  4. Turn the heat down to low-med, and simmer all of the ingredients, keeping a lid on the pan. This should take about 15 minutes. Don't forget to check on the squash, and move it around a bit!
  5. Next, throw in about 1 small-medium sized lemon, sliced thinly, on top of the chicken mixture. Put the lid back on for about 1 minute.
  6. Remove all the chicken, artichokes, and lemons from the pan and place on your serving platter. Leave the rest of the juices and most of the capers in the pan. Sprinkle in a little bit of flour to thicken up the sauce a tad, and whisk.
  7. Then, pour the sauce over the rest of your chicken, artichokes, lemons.... and there you have the lemonchocaper chicken!
  8. About this time, you should be able to take your roasted squash out of the oven.
  9. For the salad... Simply mix 3 parts olive oil to 1 part balsamic vinegar, add salt & pepper to taste. Mix in any fresh greens, and you have a super simple, light salad to go on the side of your ridiculously amazing chicken.
  10. TA DAH!

We Bought Some Wheels!!!

No you crazies ... we didn't buy a car. Who does that?

This afternoon, I go to pick up this pretty puppy. The newest, sweetest addition to our family.



Yup... I think she will do just fine.

So... If you see me out there.. Cruisin' it up, like this girl....

Fun and spunky with some cleavage. Just kidding. But maybe....

The Monday Review

I am right on time this week! I thaaaaaaaaaank ya.
Hope you all had a great weekend. I know we did!

There were actually people here with us... but in true Thriftary style, I forget to take pictures once the fun starts.

They had their grand opening this weekend, and it was so much fun, and so inspring! they opened their first handmade consignment boutique over on 21 St., featuring local artists' work. It was a beautiful collection of a million things I wish I had the money to buy (even though they were very reasonbaly priced). We met some really incredible people, including Ellis Ann who owns the shop.

While at the pool earlier on in the day, we met some great friends of friends and decided to crash her bachelorette party (just kidding... we're not that cool... we were invited).
Had a blast celebrating such a fun time in life! And I'm sure some people will kill me for posting these pictures, but they just captured the moment so honestly :)

Per usual... We always say that we are going to eat dinner at home on Sundays and then we get the itch... to not do dishes and just go out. I don't know why, but there is something so special about Sundays, and I love spending them with Burley.

We tried out the Wynkoop Brewery in downtown Denver. AMAZING food... and im on a diet so I didn't get to try their AMAZING beer. Boo!
However, if you ever find yourself at Wynkoop... order the seared ahi tuna salad. It is seriously the most delicous exploision of good flavor I have



I thought I would  include this lovely picture of myself, because my amazingly savvy aunt told me a few weeks ago that I look wonderful in all my pictures. That is because I control what goes onto this blog. However, most of the time, there is always on of these, to go with one of the good ones.

Monday Review (Shhhh... Just Let it Happen)

Hey all you Thriftarians!! Where have I been? Oh don't worry about it... Let's just all be thankful that we are here now... and that I have friends that take up some of my blogging time (THANK YOU LORD).

I of course forgot to take pictures at the pool.... at dinner with friends, etc... but here is a brief snapshot of what I DID capture
One of our best friends here in Denver works for a flower shop on the side. Sometimes, he scores bigs and brings home the BACON. Before dinner on Sunday night he and his lovely bride brought over enough tulips and Calla Lillies (??? I googled it), to fill 3 vases! thanks guys!

Strike a Pose

So today, during my typical lunch-time off-taskness.... I found this ridiculous website, TAAZ. It allows you to upload a picture of yourself and give yourself a complete makeover. It is the best site of its kind I have seen to date! I started playing around with it because I thought it could help me pick my next hair-do (I am in that "I NEED CHANGE" phase of hair-dome).

However... I ended up just laughing really hard and picking the craziest transformations I could find.

So... I thought I woudl share the laughs with all of my good friends out there in Thriftary land.
